PFAS in Cookware: What the Science Actually Says
So what is the deal with PFAS in cookware. The plain-English answer: PFAS are a family of about 15,000 synthetic chemicals used to make surfaces non-stick, water-repellent, and grease-proof per the EPA’s current understanding. They show up in Teflon, in many “ceramic” pans, and in the manufacturing of stainless-clad cookware. The research links several PFAS subtypes to cancer, thyroid disruption, and developmental harm. The marketing says “PFOA-free.” The chemistry says the story is bigger than one chemical.
The Plain-English Definition
PFAS stands for per- and polyfluoroalkyl substances. They share a carbon-fluorine bond that is the strongest single bond in organic chemistry. That bond is what makes PFAS coatings durable and water-resistant. It is also what makes the chemicals nearly impossible to break down in soil, water, or the human body — which is why they earned the nickname “forever chemicals.”
The most common consumer cookware exposure is from non-stick coatings. Teflon is the trade name for polytetrafluoroethylene (PTFE), which is itself a PFAS polymer. Many “ceramic non-stick” pans use a sol-gel coating that is technically PFAS-free in the final layer but uses PFAS-containing processing aids during manufacture.
What the Research Actually Says
The strongest peer-reviewed evidence connects two specific PFAS compounds (PFOA and PFOS, both phased out of US production by 2015) to elevated cancer risk, immune dysfunction, and thyroid disease. A 2024 review in Environmental Health Perspectives synthesized 38 epidemiology studies and concluded that PFOA exposure shows “consistent positive associations” with kidney and testicular cancer.
The newer PFAS compounds (GenX, PFBS, PFHxS) that replaced PFOA are less studied but show similar toxicity in animal models per the ATSDR toxicological profile. The CDC’s National Health and Nutrition Examination Survey detected PFAS in the blood of 97 percent of Americans tested.
For cookware specifically, the 2021 study in Environmental Science and Technology Letters measured PFAS migration from PTFE pans during normal cooking. The study found that surface scratches and overheating (above 500 degrees Fahrenheit) released measurable PFAS into food. Intact, lightly-used pans released less. Heavily-scratched pans released more.
The European Chemicals Agency proposed a universal PFAS restriction in 2023 covering most consumer uses per its PFAS restriction proposal. The proposal would phase out PFAS in cookware coatings across the EU by 2027. The United States has no equivalent federal restriction.
Here is what the research does not say. It does not say that one meal cooked on a PTFE pan will give you cancer. It does not say that all PFAS are equally harmful. And it does not say that ceramic pans are categorically safer — some ceramic-coated pans use PFAS processing aids and some titanium-coated pans use PFAS binders. The chemistry has to be specific to the product.
Common Exposure Sources
Cookware is one of several PFAS exposure routes. Per the FDA’s PFAS overview, the main consumer-product sources are:
- Non-stick cookware (PTFE / Teflon coatings, some ceramic coatings during manufacture)
- Food packaging (microwave popcorn bags, grease-resistant takeout containers, pizza boxes)
- Drinking water near industrial sites or military bases
- Stain-resistant carpets and upholstery treatments
- Water-resistant outdoor apparel (rain jackets, hiking pants)
- Some cosmetics, particularly long-wear foundation and waterproof mascara per the 2021 ES&T Letters cosmetics study
Cookware exposure is dose-dependent on how often you cook with the pan, how high the heat goes, and how scratched the surface is. Per the EPA PFAS overview, drinking water is the larger exposure source for most Americans. But cookware is one of the few exposure routes a consumer can fully control by switching materials.

What You Can Actually Do
The cleanest cookware materials are inert. That means glass, bare stainless steel, cast iron, and unglazed ceramic. None of these use PFAS in any form. The trade-off is that none of them are non-stick in the way Teflon is.
Three concrete swaps that cut PFAS exposure from cookware:
- Replace any scratched non-stick pan. The 2021 ES&T Letters study found scratched pans release measurably more PFAS. If the coating is flaking, the pan is at end of life regardless of how much was paid for it.
- Lower the heat ceiling. PTFE starts degrading at around 500 degrees Fahrenheit. Most home cooking does not need to go above 400. If a pan is smoking, the coating is breaking down.
- Switch one pan at a time. A 12-inch cast iron skillet and a stainless saucepan handle 80 percent of home cooking. The remaining 20 percent (eggs, fish) is where a true ceramic or carbon-steel pan helps.
Reading the label: “PFOA-free” means nothing. PFOA has been banned in US cookware production since 2015. “PFAS-free” is the meaningful claim — and most brands cannot make that claim because their ceramic coatings use PFAS processing aids. Is Teflon banned in the United States?
So Teflon (PTFE) is not banned in the United States. PFOA, the older chemical used to manufacture PTFE, has been phased out of US production since 2015 per the EPA PFOA stewardship program. But PTFE itself is still legal and widely used. The European Chemicals Agency has proposed a broader restriction that would cover PTFE by 2027.
Are ceramic non-stick pans PFAS-free?
And some ceramic non-stick pans are PFAS-free in the final coating but use PFAS processing aids during manufacture. Per the 2021 ES&T Letters study and follow-up testing, only brands that publish a full SDS and confirm no PFAS across the supply chain can be considered truly PFAS-free. Most cannot make that claim.
How long do PFAS stay in the body?
But the half-life depends on the specific compound. PFOA has a serum half-life of about 3.8 years in humans per the ATSDR toxicological profile. PFOS is similar at about 5.4 years. Newer short-chain PFAS like PFBS clear faster, in days to weeks, but are also less studied for long-term effects.
Should I throw out my Teflon pans right now?
So if the pan is intact and you use it below 500 degrees, it is releasing minimal PFAS during normal cooking per the published research. If the surface is scratched or flaking, the pan is at end of life. The Fair Marrow position: replace scratched non-stick first, then phase out remaining PTFE as budget allows. Is stainless steel actually PFAS-free?
And bare stainless steel cookware is fully PFAS-free. The manufacturing process does not use PFAS. Some stainless cookware with non-stick coatings on the interior (often labeled “stainless non-stick”) does use PTFE — read the product description carefully. Solid stainless (no interior coating) is the cleanest option per the EPA and ATSDR profiles.
